STUR pfanne (iron pan)

normally I don’t buy new things (new as in not pre-owned). this is an exception.

I bought a new pan because my old nonstick pan was dying. I did some quick research and it looks like PTFE-coated (aka teflon) pans might still have health- and environmental-related issues. and ceramic pans have a very short lifespan - replacing your pan every 1-2 years seems ridiculous to me. there is also enamel cookware, but eventually I wanted to avoid coatings altogether and try a simple, non-coated cast-iron pan. as it builds a seasoning over time, it should perform better with high-protein and starchy foods than a stainless steel pan. and no coating also means no damaged coating in the future I guess. :)

I read some reviews by Die Pfannenhelden and got convinced of their own cast-iron pan STUR Pfanne, which they designed themselves, and which is produced in the country I live in (Germany). what I especially like is that they post process the surface to smooth it out, which apparently reduces its weight and improves nonstick performance. AFAIK this is rather unique among cast-iron pans. but, I’m not fully convinced yet, because cast-iron pans also need some special care to keep them in shape (no soap, have to avoid acidic ingredients, don’t leave food in pan overnight, etc.). let’s see how it goes…

btw, life expectancy: 100+ years :)
